You can use the following module tag attribute to tell that module to ONLY pull listings from that specific category and its subcategories:

{module tag='newest_ads_1' cat_id='xxx'}

You would replace the "xxx" with the category id of the category to exclude. You can find any categories id within the categories admin tool. The category id for a category is the number that displays next to the category name within that admin tool.
